I don't meal plan but I LOVE reading your menus! I was sad when everyone stopped posting here!
I can add what we have had so far...

Monday: Shredded beef ribs in the crockpot that were too tough to eat Sunday and also were terrible Monday night, sweet potato fries, and broccoli
Tuesday: Meatloaf, homemade mac n' cheese, corn
Wednesday: Chicken sandwiches, some type of pasta or rice side dish, and a veggie
Thursday: Chicken tatortot casserole (in crockpot)
Friday: We usually eat out at some small little restaurant or I get pizza
Saturday: TBD

For the Mac N' Cheese, I found a recipe and I have never been a fan of someone making their own but this was easy and pretty good..it could have a bit more flavor so any suggestions would be great!

Macaroni N ' Cheese

2 tbs butter
2 tbs flour
1 cups milk
1.5 - 2 cups cooked macaroni
1 cups of shredded cheese (I did what I had on hand which was cheddar)
salt and pepper to taste

Melt butter in a saucepan, add flour and wisk for about a minute or two. Wisk in milk and then cheese..once cheese is melted pour it over your macaroni and then I added salt and pepper to taste!

So easy!

ETA: Thursday meal
