Sunday: ham with pineapple, corn, and pasta salad
Monday: taco cups
Tuesday: chicken parmesan
Wednesday: pork nachos
Thursday: meatloaf muffins
Friday: honey-lime chicken skewers
Saturday: not sure

M - zucchini lasagna (although I really don't feel like making this tonight so...?)
T - taco salad, rice pilaf, vinegar veggies
W - chicken lettuce wraps with spicy peanut sauce, coconut potato curry
TH - lemon spaghetti squash, green beans, salad
F - homemade pizza
S - chicken noodle soup
Su - meatloaf, roasted cauliflower broccoli & peppers, mashed potatoes, salad

Me too! I got halfway through today and realized that I completely forgot about dinner. Now I'm brainstorming...

Well, it ended up working out that I didn't feel like making the lasagna last night, anyway. I decided I would go ahead and make it since it was the plan, but somehow I managed to buy cucumbers at the grocery store as opposed to zucchini! Woops! We ended up doing baked chicken, sauteed squash, Italian potatoes & strawberries.

That's funny! I've totally done that before. We actually had some zucchini about to go bad so I made this this week. It was delish!!
