Rum Cake

Rum Cake
Main Ingredients:
  • bundt pan (grease and flour)
  • 1 cup – chopped pecans (or more if you like)
  • 1 yellow cake mix
  • 3 3/4 oz packet of instant vanilla pudding
  • 4 eggs
  • 1/2 cup cold water
  • 1/2 cup vegetable oil
  • 1/2 cup rum
Glaze Ingredients:
  • 1/4 lb butter
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup (dark) rum

Directions:
  1. Preheat oven to 325 degrees.
  2. Sprinkle pecans in bottom of prepared bundt pan.
  3. Mix the remaining cake ingredients and pour over nuts in pan.
  4. Bake for 1 hour.
  5. Cool cake and invert on a large glass pie pan.
  6. Melt butter in small sauce pan.
  7. Stir in sugar and water.
  8. Boil for 5 minutes - constantly stirring.
  9. Stir in rum.
  10. Prick top of cake with toothpick.
  11. Drizzle and smooth glaze over top and sides of cake.
